Chicken Nuggets


Here is a recipe I found in a book of recipes someone emailed me a few years ago. The book contains recipes of items at various food chains. Sunday night I tried the Olive Garden's Lasagna recipe. It actually tasted pretty good. I am not a huge fan of Olive Garden's lasagna, but Gregg loves it so I gave it a try. Last night I tried Chick-fil-A's chicken nuggets. I really liked them. Didn't so much taste like Chick-fil-A's, but they were still really good. I didn't bring the recipe with me so I am hoping that I have everything right. It was actually pretty simple.
What you need:
2 c. chicken, cut up in cubes
2 c. water
2 cubes of chicken bouillon (i just used 2 cups of chicken stock b/c i didn't have any cubes in the cabinet)
2 1/4 tsp. season all
1/4 tsp. paprika
1 c. flour
1 1/2 c. cracker meal
( i read on a website that CFL fries their nuggets in peanut oil. I fried those last night in regular vegetable oil and they tasted fine. I may try the Peanut oil next time!)

ok, you take the water, chicken stock and 1/4 tsp of the season all and soak the chicken in that for 12 hours or overnight.
Mix the cracker meal, flour, paprika and the remaining season all in a bowl. drain the chicken. then coat each nugget in the flour mix. (I put it all in a big Tupperware bowl and put the top on and did the "shake") Drop it down in the deep fryer until golden brown. Dump them on to a paper towel and salt to your liking. Wala! That's it! :)
They were very juicy and I didn't use any kind of sauce to eat them. I wish I would have done more than just the 2 cups (equivalent of 2 breast) . You could really do as much chicken as you needed to, the flour mix makes plenty! Hope you enjoy this recipe!

  1. Where do you get the cracker meal from? I know Neal would love this. We always have to eat at CFL anytime we go to Dothan.
