Rolled Chicken Breast

I made this last night for the surprise baby party we had for one of my friends and several asked about the recipe so I decided to add it on here. This is one of Gregg's FAVORITE things for me to cook and seemed to be quite a hit last night with the ladies too! :)

What you need:
1 pack of boneless,skinless chicken breasts
1 can of cream of mushroom soup
1 cup of sour cream
salt and pepper
2 packs of dried beef (can be found in the sandwich meat section)
1 pack of bacon
toothpicks
casserole dish

What you do:
Wash the chicken and pat it dry with a paper towel. I always cut the breasts in halves so they are smaller portions. salt and pepper the chicken real well on both sides. Cover chicken with dried beef (usually takes 2 slices), wrap a piece (or half a piece) of bacon around the chicken and beef and stick in place with toothpick. Lay each piece of chicken in to the casserole dish (you may want to spray it with cooking spray first). Once you are finished with the chicken, mix the sour cream and cream of mushroom soup together. If you want to add a splash of cooking sherry wine you can, I just am not too crazy about it, so I don't add it to mine. Cover the chicken with the soup/cream mixture. Bake in a 275 degree, preheated oven for 2 1/2 hours. About halfway through cooking, get a spoon and get some of the soup/cream mixture and cover the chicken again just to keep it moist. I like to serve this with white rice so you can pour the soup/cream gravy over the rice! It is super yummy!

Fettuccine Alfredo with Grilled Chicken

This is my favorite recipe for Fettuccine Alfredo. It is easy and delicious! It is so hard for me to order it in a restaurant because I think this recipe is much better!

You will need:*1 stick Butter
* 1 c Heavy Whipping Cream
* 1 c Parmesan Cheese
* 1 box Fettuccine
* 1 lb. Grilled Chicken Breast
* Salt & Pepper

Cook Fettuccine according to package and drain. I normally add a little salt to mine while it is boiling. In a sauce pan, melt butter, then add whipping cream, last stir in Parmesan cheese. Make sure you add those three ingredients in that order. Once mixture begins to boil turn to low. Stirring occasionally. Be carefully not to boil too long because the cheese will burn! Add a dash of pepper. Pour Alfredo sauce over cooked Fettuccine. Cut up grilled chicken and mix with Alfredo Fettuccine. Serve and enjoy! We normally add a little more Parmesan Cheese to our plate serving!

Boiled Cookies

This is one of my favorite cookies. My grandmother has always made these for us growing up and I got the recipe from her a few years ago and have made several batches. It's very easy and doesn't really require a lot of ingredients. Most of the time, I have the ingredients stashed away in my pantry anyway.
WHAT YOU NEED:
4 tablespoons of cocoa powder


2 c. of sugar
1/2 c. milk
1 stick of butter
2 1/2 c. quick cooking oats

1/2 tsp vanilla
1/2 c. crunchy peanut butter

WHAT YOU DO:
Mix the cocoa, sugar, butter and milk together in a saucepan and bring to a boil, once bubbles cover the top, stir constantly for 1 1/2-2 minutes and remove from heat. Add vanilla, peanut butter and oats and stir until mixed well. Drop by the teaspoon full IMMEDIATELY onto wax paper and let cool. Makes about 3 dozen.

White Chocolate-Berry Delight

Since strawberries are in season, I thought I would post this super easy and yummy dessert that calls for fresh berries! It is very light and perfect after a large dinner!




Ingredients:
*Fresh Berries (We've used strawberries, blueberries, and blackberries...use your favorite berries!)
* Heavy Whipping Cream
*Baker's White Chocolate

Wash and chop strawberries. For smaller berries, wash and remove any stems. Keep the berries in the refrigerator. The colder the berries, the better the taste! In a double boiler, melt chocolate. If you do not have a double boiler, stack two pots on top of each other! It works the same way! While chocolate is melting, add whipping cream. Add enough whipping cream to make the consistency you like! Once chocolate is melted, drizzle over berries and enjoy!

Added Author

Just wanted to let everyone know that I have added an author to this blog. My friend Ashton was going to start a recipe type blog and I told her that I would just add her as an author to mine. :) I have also changed the web address to it so if you have it saved in your dashboard, you may need to go change it.

K-A-I-D-I Letters

After starting on Kaidi's letters back in March I decided it was time I sit down and finish the last 2 letters. To make these letters, I bought some wooden cut out letters
from Hobby Lobby and then some scrapbook paper that I felt would match her room. I also bought some mod podge
and used it to stick the paper to the letters. I laid the wooden letter on the scrap book paper, traced around the letter with about a 1/4 inch margin and then cut it out. I then covered the letter with the mod podge
and stuck it on top of the paper. i tucked all the edges around it and gave it a top layer of mod podge (it dries clear) and let it dry and I am finished. I am not completely finished with this project because I still want to tack some ribbon to the back of the letters so that I can hang it on her wall. Here is a pic of the letters.
